On my Chigaco Cuttlery 8 inch french knife, I can't get a burr on the M130 chefs choice,...?

...what do I do?
I have used stage 1 for maybe a total of 2 or 3 minutes. Do I need to use stage 1 longer? I have gotten a burr on other knives, and it didn't take very long. Is this knife just that hard?

Well, it could be that your sharpener needs to be cleaned or have the wheels replaced. In a similar vein, it may also need to be emptied. There's a clean-out cover (I think it's on the bottom of the M130). It may simply be that this knife is very dull, and it's clean enough to work on your other knives but not this one.

Another thought: how was this knife last sharpened? If it was last sharpened with a very different angle (say, a single bevel rather than the compound bevel the Chef's Choice creates) the thing may be cranking away to remove metal that isn't directly related to the edge.

If that's the case, I'd expect it to have done its work in 2-3 minutes, unless the stones are getting old or dirty. There's a lever on the back that you press to clean the disks.

I think at this point I'd skip ahead to the next stage and see how that goes. Give it 10 strokes, then go back to stage 1 for another 10 strokes. See if that helps.
