Can you hone a knife with an 8000 grit stone?
I own a set of Globals (Ikasu Knife Block Set) and I am considering buying the Global diamond steel which has a grit of 600. I am also planning on buying a Kasumi combination stone with a 3000 grit side and a 8000 grit side.
Since the honing steel is coarser than both sides of the stone, could I just buy the stone and hone it on the 8000 grit side?
I only want to re-align the edge, I don't want to remove too much metal.

In short no.
For starters, Global accessories are waaay overpriced. I've seen their Diamond sharpening rods sold for 155$, which is ridiculous. DMT sharpeners with identical or longer length cost less than the quarter of that, and as far as sharpening performance and quality goes they're are every bit as good and better than global diamond rods. You're just paying for the fancy handle and brand name.
You could buy 2-3 different grit diamond DMT rods for that price and still have change for something else.
Now for the honing.
By definition honing it realigning the deformed edge. And 600 grit rod or even 5000 grit rod will do more than that, it's an abrasive that will remove the metal.
Global knives are hardened to 56-58HRC, which is fairly soft for any abrasive material. Traditional Japanese knives are much harder, anywhere from 62 HRC to 66-67HRC. Those super hard blades have to be honed on very fine ceramic rods or glass rods. Stropping on the leater just doesn't have power to align the deformed edge because it is so hard.

So, to summarize. Given the hardness of the global knives is is best to hone them either on he leather strop, or on the smooth steel. Avoid grooved steel, it'll rip chunks of the deformed blade out instead of aligning them.

Other than that, 8000 grit stone is still a sharpener, not honing. Even with much harder knives compared to global i.e. 64-67HRC on the rockwell, I use 10000-12000 grit stones as sharpeners because they do sharpen by removing metal.

And trust me, even with 12K stone it's very easy to see removed metal on the stone. In fact because they're softer that other Japanese knives I often can skip 3000K and 5K stones and restore the edge on 12K stone. Not really a good thing to do, waste of expensive 12K stone, but for experimenting with sharpening techniques and studying metal it was worth doing couple times.
