What is the best way to keep sliced onions fresh tasting?

We own a deli. We were cutting them after tomatoes on a slicer...but are thinking the acid of the tomatoes is "turning" the onions too fast.

Wipe down, or rinse off the cutting equipment, removing all the acid from the tomatoes before cutting the onions. You could always cut some bread in between the tomatoes and the onions, too. That would clean the blades off quickly.
